MALOLACTIC FERMENTATION
Once a correct alcoholic fermentation has been carried out, the next step is the malolactic fermentation. Also known in the world of wine as secondary fermentation. The malolactic fermentation of wine consists in the transformation of malic acid into lactic acid. Malic acid is found naturally in grapes and, when transformed into lactic acid, a decrease in the total acidity of the wine is generated
