ALCOHOLIC FERMENTATION
First, alcoholic fermentation is responsible for transforming grape sugars into alcohol. It is made in large stainless steel tanks where, thanks to the action of the different yeasts, the sugars become ethyl alcohol.
During this natural process it is possible to soften and guarantee optimum wine quality, since alcohol acts as a barrier to possible substances that could negatively influence, damaging the wine.
